Halloween Tags

It's that time of the year again!!! October! Halloween!! Yes!! I love Halloween!! Every year I think all year long about ideas for potential costumes.  I always do this, in hopes that I will be well prepared with a costume, but it never fails, here I am the week of Halloween and I'm scrambling for a costume! UGH! I have so many great ideas, so why can't I nail it down and get it going?!! I think the only answer I can really come up with, is too much excitement over the season! That combined with a little(a lot) of procrastination.  I love giving goodies out for Halloween!! Honestly, when it comes to the kiddies I don't like to give them all candy.  I like giving them a little tricks too.  Here are some tags that I made for this Halloween.  I made all of these tags with my cricut, using the Create a critter 2 cartridge for the images, and the tags, bags, and boxes cartridge for the tags.  I will post more to follow!

Do you dress up?  What are you going to be this year?  What is your fave Halloween treat?

Kalua Pig Nachos

Hi! Hi!! It's been awhile! I just wanted to share one of my go to dishes! It's great for football season!!   For those of you that don't know what kalua pork is, kalua in Hawaiian means to cook in an underground oven or an imu.  In a nutshell it is pork cooked in an underground oven.  It is shredded and served. You can totally make this in the oven, but traditionally it's made in the imu.   I first discovered this awesome dish at a local bar, and thought it was so delish!  Then I found it on foodland.com  and I had to try it.  It's been a hit every time, so now it's one of my go to dishes!  It's so easy and so yummy!! I make mine a little different from the recipe.

Kalua Pig Nachos

-Any type of corn chips (I usually use Tostitos chips)
-1 container of Kalua Pig
-Shredded cheeses of your choice (at least bags)
-1 container of lomi lomi salmon (or make your own)
-1-2 avocados
-1 lemon
-1 container of Sour Cream
-Chili Pepper water
-1 bunch Green Onion chopped
-1 bottle sliced Jalepenos

*Preheat oven to 350 degrees F
-I don't use guacamole for in my recipe, but feel free to use it if you'd like.  Instead, I mash the fresh avocados, juice the juice of half of the lemon, and sprinkle a little salt.  Mash it all together, until it comes smooth.  The lemon should help smooth it out.  Set that on the side for later.
-For the lomi salmon, you can buy ready made or make your own by, dicing up tomatoes, onions, green onions, and chopped salted salmon.
-Prep you sour cream by adding chili pepper water to your sour cream, you may squeeze some of the left over lemon in it if you'd like.
-To make things easier I use a foil pan, spray it lightly with cooking spray
- Add some chips  to cover the bottom of the pan
-Add some cheese on top of chips,
-Add some Kalua Pig,
Keep layering the cheese, chips, and Kalua until you have your desired amount
-Put the pan in the oven for 5-10 mins, until the cheese is melted
-Once you remove the pan from the oven, add the rest of your ingredients
-Top the chips with the avocados
-Now add the sour cream
-Then add the lomi salmon
-Next add the green onions
-Finally top it off with the sliced jalepenos
*Serve hot and Enjoy!

*I have made this with liquid cheese, it does get soggy faster, but it doesn't dry out as fast as the shredded cheese does.  Usually it's gone before it gets too soggy or dry.  Use your own judgement, it tastes awesome either way!   Sometimes liquid cheese is a little expensive, unless you're buying the huge can size.
Have you made this before?  What's your go to dishes? What are your football fav dishes?

Cheers to the weekend!!!
