Over the Rainbow Delicious

Hi! I know it's been a minute since my last post! I know, I'm not doing a great job keep up with this blog! Ugh! I will strive to do better! I hope all is well with everyone!! The year is starting to breeze by...Spring is here! I know with the weird weather all over, it's hard to really say that.  Last year I shared with you some munchies that I made for St. Pattie's Day.  I love it so much, that I made it again this year!! It's so easy and fun!! I will give you a brisk walk through on how I made it or check it out on Bakerella!(love her!!)  I did tweak it here and there a little just to make the ingredients stretch. I totally went generic for this, to get more bang for the buck, because I made a lot this year.

Ingredients:
-Lucky Charms cereal ( I used the generic brand that has marshmallows in it)
-Cheerios cereal ( I used the generic brand)
-Fruit Loops (I used the generic brand)
-Pretzel sticks
-Peanuts
-White Chocolate ( I used Ghirardelli, I sprung for this because it is very flavorful and the flavor really comes across)

Depending on how much you're planning on making, you can decide how much cereal and chocolate to use.  I used Cheerios to stretch the recipe a little, and cuts the sweetness a little.  I did add the fruit loops to add more color, since it was a St. Pattie's day treat! It's totally up to you!

Get a large pan, you can line it with wax or parchment paper or lightly spray it with cooking spray.  You don't have to do this, it just helps with clean up.  Pour in all your ingredients, except for the White Chocolate.

Pour your White Chocolate in a microwavable dish, and start heating it up in 30 second intervals, taking it out each time and mixing it. Keep doing this until the chocolate is totally melted.  *Make sure the chocolate is melted all the way through.

Once your chocolate is ready, start pouring it into your cereal mix and spread it out.  It will start to clump, you want to keep spreading it so it coats the entire pan.  Eventually it will all start to cluster.  Once you have used all your chocolate and it's all evenly spread, let it cool for about 10 mins. and you can bag it or put it in air tight containers.
Enjoy!!
Thinking about changing it up a little and making it for Easter treats too!! It's great for any holiday!
